Roasted Collard Greens

A new and different way to enjoy our delicious collards – lately I make this recipe at least twice a week! It’s delicious as a side dish, mixed into scrambled eggs,  or replacing lettuce in a BLT or other sandwich.

1 bunch of collards, thick stem removed and sliced into 1″ strips
1 Tbsp olive oil
dash of salt, pepper, or any other seasonings you desire

Preheat oven to 425deg. Toss collards with oil and seasonings and spread out on baking sheet. Bake for 15-20 min, stirring once or twice. Some leaves will be crispy and brown, others will still be bright green when finished. You will discover your own level of preferred doneness on the wilted to crispy spectrum. Enjoy!

I oftentimes add a diced onion or shallot or some cloves of garlic to the mix.
